I have a 5 yr old named Mikayla Rose. I dont know for sure if we are going to use Merci, but I think out of all the names we have come up with that one is sticking.

I'm hoping that you are having a sister for Mikayla and want a compatible name for the new baby. Cuz changing Mikayla's name just wouldn't be right, especially if she is 5 years old.
Will you pronounce Merci like the English word "mercy" or will it be pronounced like the French "mare-see"? Pronunciation will make a difference when deciding on just the right middle name.
If you go with the French pronunciation:
Merci Avril
Merci Celine
Merci Antoinette
Merci Suzette
Merci Yvette
If you go with the English pronunciation:
Merci Alexandra
Merci Anne
Merci Elizabeth
Merci Louise
Merci Clarisse
Good luck!

I love the name Mercy, but Merci is flimsy. And calls into question the pronunciation. Do you mean MUR see, like the noun, or mair SEE like the French word for thank you? They share etymological roots, but that's about it.
As for middle names, how about:
Mercy Genevieve
Mercy Celeste
Mercy Anneliese
Mercy Elinor
Mercy Jane
My personal rule of thumb is that if you can find it in the dictionary, you should spell it accordingly - so yes to Journey, Haven, Winter and Grace but no to Jurnee, Havyn, Wynther and Grayse.
Best wishes!
